Gluten Free Glazed Orange Fruited Cake with Dole

This bundt cake is moist and flavorful. Finding pieces of fruit in your bite is a little treasure! This is festive enough that it can be served at your holiday table. I made ours gluten free, but you can use a regular cake mix and get the same results.
It's quick - only 10 minutes prep time.

  • 1 can ( 15 oz. ) Dole Mandarin Oranges
  • 1 box ( 2 layer ) yellow cake mix
  • 3 eggs
  • 1/2 cup vegetable oil or melted butter ( butter makes a more rich cake )
  • 1 orange, peel grated and juice reserved ( the more orange peel the better! )
  • 1 cup powdered sugar
Preheat oven to 350 F. Spray bundt pan with cooking spray with four, or grease and flour pan. Drain mandarin oranges, reserve the juice.

Combine cake mix, juice from can, eggs, oil, and grated orange peel in a large mixing bowl. beat 2 minutes. Pour 1/3 of the batter into prepared pan; layer half of mandarin oranges. Pour another 1/3 of the batter into the pan; layer the remaining oranges. Pour remaining cake batter into the pan.

Bake 40 to 45 minutes or until toothpick inserted into the center comes out clean. Cool pan for 20 minutes. Turn out onto wire cooling rack; cool completely.

Combine juice from orange and powdered sugar in a small bowl; whisk until well blended. Gently brush all over the cake with a pastry brush and drizzle any extra over the sides.  

Makes 12 servings I used a rose bundt pan, but any bundt pan can be used.
